  • 1 lb baby potatoes
  • 1 lb asparagus
  • 4 (6 oz) salmon fillets
  • 3 Tbsp whole grain Dijon mustard
  • 3 Tbsp maple syrup
  • 1 Tbsp olive oil
  • 3 cloves garlic
  • 2 tsp fresh thyme
  • Salt and pepper
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 1/4 tsp paprika

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, toss baby potatoes with olive oil, garlic, thyme, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 20-25 minutes until browned.
  4. Meanwhile, prepare asparagus by tossing it with olive oil, garlic, lemon zest, salt, and pepper.
  5. Whisk together Dijon mustard, maple syrup, garlic, lemon juice, thyme, paprika, salt, and pepper for the glaze.
  6. After the potatoes are cooked, push them to one side of the pan. Add asparagus to the other side and place salmon fillets in the center. Brush each fillet with the glaze.
  7. Season with additional salt and pepper and return to the oven for another 15 minutes until the salmon is cooked through.
