  • cup almond flour
  • cup shelled pistachios (finely ground)
  • cup unsalted butter (softened)
  • cup granulated sugar
  • cup ricotta cheese
  • 1 large egg
  • Honey (for drizzling)

Instructions

  1. Preheat your oven to 350F (180C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add ricotta cheese, egg, vanilla extract, and mix until smooth.
  3. Gradually add all-purpose flour, almond flour, ground pistachios, baking powder, and salt until a soft dough forms.
  4. Roll tablespoon-sized portions into balls and place them on the baking sheet with space between each.
  5. Bake for 12-15 minutes until edges are lightly golden. Allow cooling for 5 minutes before drizzling with honey and optionally sprinkling with chopped pistachios.
