Ingredients

  • 1 cup black or green lentils
  • Juice of 2 large lemons
  • 12 large garlic cloves, pressed or minced
  • 1 English cucumber, chopped into large pieces
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 2 green onions, trimmed and chopped
  • cup chopped fresh parsley
  • cup chopped fresh mint
  • ? cup extra virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Whisk lemon juice, minced garlic, salt, pepper, and Urfa Biber in a bowl. Gradually add olive oil while whisking until emulsified.
  2. In a saucepan, combine rinsed lentils and bay leaf with water; boil then simmer for 2025 minutes until tender. Drain and discard the bay leaf.
  3. While warm, mix lentils with the dressing to coat well.
  4. Add cucumber, bell peppers, green onions, parsley, and mint; toss gently to combine.
  5. Taste and adjust seasonings if necessary. Serve immediately or refrigerate for enhanced flavor.
