  • 1/2 C granulated sugar

  • Zest of 1 lemon
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 C all purpose flour
  • 1/3 C sour cream
  • 3 Tb unsalted butter (softened)
  • 1/4 C cream cheese (softened)
  • 3 C powdered sugar
  • 3 Tb lemon curd (room temperature)

Instructions

  1. Preheat your oven to 350F (175C) and line a cupcake pan with paper liners.
  2. In a bowl or stand mixer, cream softened butter and sugar until light. Add egg, vanilla extract, lemon juice, and zest; mix well.
  3. Combine flour, baking powder, and salt in another bowl. Gradually add dry ingredients to wet mixture, alternating with sour cream until combined.
  4. Divide batter into liners and bake for 1820 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  5. For frosting, beat together softened cream cheese and butter until smooth. Gradually mix in powdered sugar and lemon curd until creamy.
  6. Pipe or spread frosting on cooled cupcakes as desired.
