  • 1 spaghetti squash (23 pounds)
  • 1 pound steak
  • 3/4 cup frozen spinach (thawed and drained) or 1.5 cups fresh spinach
  • 4 oz gorgonzola crumbles
  • 1 cup mozzarella cheese (grated)
  • 8 tbsp unsalted butter
  • 2 cups heavy cream
  • 1.5 cups freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise, remove seeds, and drizzle with vegetable oil, salt, and pepper.
  3. Roast cut-side down on a baking sheet for 30-40 minutes until tender.
  4. Cook seasoned steak in a skillet over medium heat until just shy of your desired doneness.
  5. In a saucepan, melt butter and cream; add nutmeg and Parmesan cheese, stirring until smooth.
  6. Fluff the spaghetti squash with a fork, mixing in steak, spinach, sundried tomatoes, gorgonzola, and half of the Alfredo sauce.
  7. Top with mozzarella cheese and bake for an additional 15 minutes until melted.
