  • 1 cup roasted red peppers
  • cup fresh parsley
  • cup red wine vinegar
  • 2 tablespoons unsalted butter
  • cup olive oil
  • 2 large onions
  • 1/4 cup lemon juice
  • 1/4 teaspoon black pepper
  • teaspoon salt
  • teaspoon Korean chili flakes
  • 2 teaspoons smoked paprika
  • 5 garlic cloves
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • 8 tablespoons butter (room temperature)
  • 1 teaspoon garlic (very finely minced)
  • 2 teaspoons fresh parsley (finely chopped)

Instructions

  1. Prepare chimichurri by blending parsley, garlic, red wine vinegar, smoked paprika, lemon juice, black pepper, salt, and olive oil until smooth.
  2. In a skillet over medium heat, melt butter and add thinly sliced onions. Cook until caramelized (approximately 20 minutes), then stir in brown sugar and balsamic vinegar.
  3. Season filet mignon steaks with salt and pepper. Grill on high heat for about 4-5 minutes per side for medium-rare; let rest.
  4. Slice baguette into half-inch pieces and brush with olive oil. Bake at 400F for 1-2 minutes until crispy.
  5. Slice rested steak thinly and assemble crostinis: layer caramelized onions, garlic butter (mixed with softened butter and parsley), steak slices, and drizzle with chimichurri.
