  • 1 lb medium-sized carrots, peeled and cut into uniform pieces
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tbsp pure maple syrup
  • 1 tsp smoked paprika
  • tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • cup plain Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 425F (220C) and line a baking sheet with parchment paper.
  2. Arrange the carrots on one side of the baking sheet; drizzle with a mixture of maple syrup, smoked paprika, cayenne pepper, salt, and pepper.
  3. On the other side, spread the chickpeas; drizzle with olive oil and season with salt.
  4. Roast both for 25-30 minutes until carrots are tender and lightly charred while chickpeas are golden brown.
  5. In a bowl, mix Greek yogurt with lemon juice for the sauce.
  6. Serve roasted vegetables drizzled with yogurt sauce.
