  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400F (200C).
  2. Peel and cube sweet potatoes; place them in a large baking dish. Toss with 2 tbsp olive oil, garlic powder, rosemary, salt, and pepper.
  3. Bake sweet potatoes for 30 minutes until tender.
  4. While they bake, heat a skillet over medium heat and cook ground turkey with remaining olive oil, garlic powder, rosemary, salt, and pepper until browned.
  5. Chop zucchini into slices; add to the baking dish after the sweet potatoes are done.
  6. Combine sweet potatoes with cooked turkey and zucchini; return to oven for another 10 minutes.
  7. Drizzle with remaining olive oil and sprinkle with parmesan cheese; bake for an additional 10 minutes until golden brown.
