  • 4 wild salmon fillets (6 oz each)
  • 1/4 cup chopped red onion
  • 1 tbsp extra virgin olive oil
  • 2 medium vine ripe tomatoes
  • 2 small cloves garlic (minced)
  • 2 tbsp fresh basil leaves (chopped)
  • 4 oz diced avocado
  • 1/4 tsp kosher salt
  • black pepper
  • 1 tbsp balsamic vinegar
  • cooking spray

Instructions

  1. Combine chopped red onion, olive oil, balsamic vinegar, salt, and pepper in a bowl. Let it sit for 5 minutes.
  2. In another bowl, mix chopped tomatoes, minced garlic, basil, and the onion mixture. Season to taste and let sit for at least 10 minutes.
  3. Preheat the grill to medium-high and oil the grates.
  4. Season salmon fillets with salt and pepper. Grill skin-side down for about 8-10 minutes until cooked through.
  5. Allow salmon to rest for a few minutes before serving.
