  • 4 large ripe bananas (mashed)
  • 2 large eggs
  • 1/4 cup butter (melted and cooled)
  • 1 2/3 cups gluten-free all-purpose flour
  • 1/2 cup coconut sugar
  • 1 tsp baking soda
  • Optional: 2/3 cup chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F and line a 9” x 5” loaf pan with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth. Whisk in eggs, vanilla extract, and melted butter.
  3. In another bowl, combine gluten-free flour, coconut sugar, baking soda, sea salt, and optional cinnamon.
  4. Pour the dry mixture into the wet ingredients and stir until just incorporated. Fold in any mix-ins if desired.
  5. Transfer the batter to the prepared loaf pan and optionally sprinkle more chocolate chips on top.
  6. Bake for 50 to 60 minutes until golden brown; cover with foil if browning too quickly.
  7. Let cool in the pan for about 30 minutes before slicing.
