  • 1 lb lean ground turkey
  • 3 garlic cloves, minced
  • cup fresh parsley, chopped
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cucumber, diced
  • 1 cup quinoa or couscous (dry)
  • cup tahini
  • 2 tbsp fresh lemon juice
  • 24 tbsp water

Instructions

  1. Preheat oven to 400F (200C). In a large bowl, combine ground turkey, minced garlic, chopped parsley, salt, and pepper until well mixed.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a lined baking sheet.
  3. Bake for 15-20 minutes until cooked through and golden brown.
  4. While meatballs bake, prepare quinoa or couscous according to package instructions. Chop cucumber and rinse chickpeas.
  5. For the sauce, whisk tahini, lemon juice, water, and salt until smooth; adjust consistency as needed.
  6. To serve, layer quinoa or couscous in bowls, top with chickpeas and cucumber, followed by baked meatballs. Drizzle with tahini sauce before serving.
