  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 3/4 cup warm water (about 110F/43C)
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine warm water and active dry yeast; let sit for 5 minutes until frothy.
  2. Add sugar, salt, olive oil, and flour; mix until dough forms a ball.
  3. Knead on a floured surface for 57 minutes until smooth.
  4. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm place for about 1 hour or until doubled.
  5. Punch down dough and divide into six pieces; shape each into a small baguette.
  6. Place on a parchment-lined baking sheet; cover and let rise for an additional 30 minutes.
  7. Preheat oven to 425F (220C). Optionally brush baguettes with egg wash.
  8. Bake for approximately 18 minutes until golden brown.
