  • 1 lb fresh skinless salmon fillets
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise (for bang bang sauce)
  • 1/4 cup sweet chili sauce (for bang bang sauce)
  • 1 tbsp sriracha (for bang bang sauce)
  • 1 tbsp honey (for bang bang sauce)
  • 1 tbsp lime juice (for bang bang sauce)

Instructions

  1. Cut salmon into 1-inch cubes and pat dry.
  2. Set up a breading station: one bowl with flour, another with beaten eggs, and the last with panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each salmon piece in flour, dip in eggs, then roll in the panko mixture.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Fry salmon bites in batches for about 2-3 minutes per side until golden brown.
  6. For the bang bang sauce, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  7. Serve immediately with sauce drizzled on top or on the side.
