  • 2 lbs salmon fillets
  • 3 Tbsp avocado oil (2 for salmon, 1 for sauce)
  • 1 cup yellow onion, chopped
  • 5 cloves garlic, minced
  • 1 jar (16 oz) roasted red peppers, drained
  • 1 can (15 oz) full-fat coconut milk
  • Sea salt and spices (garlic powder, paprika) to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine 2 Tbsp avocado oil, sea salt, garlic powder, and paprika. Rub over salmon fillets and place skin-side down in a baking dish.
  3. Heat 1 Tbsp avocado oil in a skillet over medium heat. Sauté onions until translucent, then add garlic until fragrant.
  4. Stir in roasted red peppers and coconut milk, simmering for about 5 minutes.
  5. Pour sauce over salmon and bake for 20-25 minutes until salmon flakes easily with a fork.
