  • 1 cup graham cracker crumbs
  • 6 tbsp unsalted butter (melted)
  • 16 oz full-fat cream cheese (room temperature)
  • 1 cup granulated sugar (plus extra for mango curd)
  • 2 large eggs
  • 1/2 cup fresh mango puree
  • 1/3 cup coconut cream
  • 1/4 tsp coconut extract

Instructions

  1. Preheat the oven to 325°F (163°C). Prepare a greased 9×9 inch baking pan.
  2. For the mango curd, cook mango puree, sugar, lime juice, cornstarch, and eggs over low heat until thickened. Let cool.
  3. In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into the bottom of the pan and bake for 10 minutes.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in coconut cream and extract.
  5. Pour half the cheesecake mixture over the crust; add dollops of mango curd and swirl gently. Top with remaining cheesecake filling and more curd if desired.
  6. Bake for about 50 minutes until set but slightly jiggly in the center. Cool to room temperature before refrigerating for at least four hours.
