  • 4 boneless, skinless chicken breasts
  • 1 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 3 tablespoons unsalted butter
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • Fresh parsley for garnish
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 0.25 cup chopped fresh parsley
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken for 67 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, melt butter, saut garlic for 1 minute, then add white wine and simmer for 23 minutes.
  4. Stir in chicken broth and thyme; return chicken to skillet and cover to simmer for 1520 minutes until cooked through (165F).
  5. Mix in heavy cream and lemon juice if desired; cook for another 23 minutes.
  6. Serve garnished with parsley.
