  • 23 large heirloom tomatoes
  • 1 cup cherry tomatoes
  • 1/2 cup assorted olives
  • 1/2 cup pickled peppers
  • 1/4 red onion, thinly sliced
  • 1/4 lb salami, chicken ham, prosciutto, or other sliced meat
  • Lettuce or micro-greens
  • Fresh herbs (basil, oregano)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoons apple cider vinegar (red or white)
  • Italian herb blend
  • Sugar
  • Coarse salt
  • Pepper

Instructions

  1. Prepare your ingredients by arranging olives and pickled peppers on one end of a serving platter. Create a light bed of greens on the opposite side.
  2. Slice heirloom tomatoes into thick pieces and halve cherry tomatoes. Whisk together dressing ingredients in a mixing bowl.
  3. Assemble the platter by overlapping sliced heirloom tomatoes in the center, topping with halved cherry tomatoes and red onions. Fill in spaces with slices of your chosen meats.
  4. Gently slice open the burrata to allow its creamy interior to flow out. Drizzle dressing over all components and serve immediately.
