  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Optional: Turbinado sugar for topping

Instructions

  1. Prepare the brown butter in a saucepan over medium heat until golden brown.
  2. In a bowl, mix flour and salt before adding the browned butter. Combine until crumbly.
  3. Gradually add cold water mixed with vinegar to form the dough. Wrap and chill for at least one hour.
  4. Combine sliced peaches and strawberries with sugar, cornstarch, lemon juice, and salt in another bowl.
  5. Preheat your oven to 375°F (190°C). Roll out half of the chilled dough into your baking dish.
  6. Pour the fruit filling into the crust and roll out the remaining dough for the top.
  7. Bake for about 70 minutes until golden brown.
