  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 packages Biscoff cookies (one for crust, one for topping)
  • 1 jar salted caramel sauce

Instructions

  1. Preheat oven to 325F (160C). Crush one package of Biscoff cookies and mix with melted butter to form the crust. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; gradually add sugar, then eggs one at a time. Mix in heavy cream and vanilla until incorporated.
  3. Pour filling over crust and bake for about 60 minutes, until edges are set but center is slightly jiggly. Cool in oven with door ajar for an hour.
  4. Refrigerate for at least 4 hours or overnight. Top with salted caramel sauce and crushed Biscoff cookies before serving.
