  • 4 cups mixed greens (romaine, cabbage, kale)
  • 1 cup shredded red cabbage
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 carrot (julienned)
  • 1/2 cucumber (thinly sliced)
  • Crispy wonton strips for topping
  • Almonds for crunch

Instructions

  1. Marinate chicken in soy sauce, honey, and sesame oil for 15 minutes.
  2. Coat marinated chicken in beaten egg and panko breadcrumbs.
  3. Cook in an air fryer at 375°F for 12-15 minutes until golden brown.
  4. In a bowl, whisk together dressing ingredients: soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes.
  5. Toss mixed greens, shredded cabbage, carrot, cucumber, cilantro, and green onions in a large bowl.
  6. Add cooked chicken strips and toss gently with crispy wonton strips and almonds.
  7. Drizzle dressing over the salad just before serving.
