  • 2 cups shredded zucchini
  • For Frosting: 6 tablespoons cocoa powder
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350F (175C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the oil (or applesauce), sugar, and vanilla until smooth.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt; then combine with the wet ingredients.
  4. If necessary, squeeze excess moisture from the zucchini before adding it to the batter. Mix until well blended.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
  6. For frosting, melt cocoa powder and butter together; cool slightly before mixing in powdered sugar and milk until smooth. Spread over cooled brownies.
