  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1/2 Red Capsicum/Bell Pepper, diced
  • 2 Turkey Bacon Slices/Rashers, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 2 tablespoons Olive Oil
  • 1 Brown/Yellow Onion, diced
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 180C (350F) and line a 9×9 inch baking dish with baking paper.
  2. Grate the zucchini and carrot into a colander; sprinkle with salt and let sit for 10 minutes to remove excess moisture.
  3. In a frying pan over medium heat, add olive oil; saut onions and turkey bacon until golden brown. Set aside to cool slightly.
  4. Squeeze excess moisture from the zucchini and carrot; combine them in a bowl with capsicum, cooked onion, turkey bacon, cheese, and flour. Mix well.
  5. Add eggs, milk, remaining oil, salt, and pepper; mix until combined.
  6. Pour mixture into the baking dish, smooth the top, sprinkle remaining cheese on top, and bake for 35-40 minutes or until firm.
