  • 16 ounces tomatoes (chopped)
  • 5 cloves garlic (minced)
  • 3 tablespoons tomato paste
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • Salt to taste
  • Fresh parsley and cilantro for garnish

Instructions

  1. Chop the eggplants and tomatoes into small dice.
  2. In a large skillet, heat olive oil over medium heat. Add garlic, tomato paste, cumin, smoked paprika, and red pepper flakes; saut until fragrant.
  3. Stir in chopped tomatoes and salt; cook for about five minutes.
  4. Add diced eggplants and water; cover and simmer for 20 minutes until tender.
  5. Mix in parsley and cilantro; mash slightly for creaminess. Cool for 15 minutes before serving.
