  • 4 lbs yellow squash, sliced
  • 1 cup sour cream
  • 1 large egg
  • 1 1/4 cups sharp cheddar cheese
  • 1 cup parmesan cheese (divided)
  • 3/4 cup panko breadcrumbs (divided)
  • 2 Tbsp dried chives
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F and spray a 13×9-inch baking dish with cooking spray.
  2. Boil the sliced yellow squash for about 5-6 minutes until nearly tender. Drain well.
  3. In a mixing bowl, combine sour cream, egg, half the panko (1/3 cup), cheddar cheese, half the parmesan (1/2 cup), parsley, and chives.
  4. Sauté onions in butter until golden brown; add garlic for an additional minute.
  5. Combine sautéed onions with boiled squash and sour cream mixture; season with salt and pepper.
  6. Pour into prepared baking dish and cover with foil; bake for 20 minutes.
  7. Prepare topping by mixing remaining panko and parmesan with melted butter.
  8. Uncover casserole, sprinkle topping evenly over it; bake uncovered for another 10 minutes.
  9. Broil briefly to achieve desired crispiness; serve garnished with parsley.
