  • 1 cup warm water (110F)
  • 1/3 cup warm whole milk (110F)
  • 2 and 1/4 teaspoons active dry or instant yeast
  • 2 cups whole wheat flour
  • 3 tablespoons honey
  • 3 tablespoons unsalted butter
  • 1 teaspoon fresh lemon juice or apple cider vinegar
  • 1 and 1/4 teaspoons salt

Instructions

  1. In a large bowl or stand mixer, whisk together water, milk, and yeast.
  2. Add 2 cups of whole wheat flour and stir until thick. Cover and let rise until doubled (6090 minutes).
  3. Mix in honey, butter, lemon juice, remaining flour, and salt until dough pulls away from sides.
  4. Knead for 810 minutes until elastic; let rise in greased bowl until doubled.
  5. Shape dough into an 8-inch log and place it in a greased loaf pan. Allow it to rise again until inch above the pan.
  6. Preheat oven to 350F. Bake for 3640 minutes until golden brown and hollow-sounding when tapped.
