  • 9 large egg whites
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 1 cups full-fat sour cream
  • cup whole milk
  • Red gel food coloring
  • Blue gel food coloring
  • 1 pound unsalted butter, room temperature
  • 2 pounds confectioners sugar
  • cup milk or cream, plus more if needed
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • Patriotic nonpareils (for decoration)

Instructions

  1. Preheat oven to 350F (175C) and grease three 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a stand mixer, beat sugar and softened butter until creamy.
  4. Add egg whites one at a time, then mix in vanilla and almond extracts.
  5. Alternate adding dry ingredients and sour cream until just combined.
  6. Divide batter into three bowls; tint one red, another blue, and leave one white.
  7. Pour colored batters into prepared pans and bake: red layer for 30-35 minutes; white and blue layers for 20-25 minutes.
  8. Let cool before frosting with Vanilla-Almond Buttercream.
