  • 4 nectarines (pitted and quartered)
  • 4 ounces cherry tomatoes (halved)
  • 2 heirloom tomatoes (halved and cut into eighths)
  • 1/2 cup fresh cherries (pitted and halved)
  • 8 ounces burrata cheese (torn)
  • 8 slices prosciutto
  • 1/2 cup mixed baby spring greens
  • 1 tablespoon fresh oregano (roughly minced)
  • 1 tablespoon fresh mint (roughly minced)
  • 1 tablespoon fresh lemon thyme leaves
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white apple vinegar
  • 1 tablespoon lemon zest
  • 1/2 cup extra virgin olive oil
  • Pinch of salt
  • Fresh ground black pepper as desired
  • Finishing salt
  • Grilled baguette for serving

Instructions

  1. Preheat grill or grill pan over medium-high heat. Brush nectarines with olive oil.
  2. Grill nectarines for 2-3 minutes per side until marked and tender. Remove and cool.
  3. In a small bowl, whisk together vinaigrette ingredients until combined.
  4. In a large salad bowl, toss mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette. Top with burrata and prosciutto.
  5. Garnish with fresh herbs and serve with toasted baguette if desired.
