  • 4 cups watermelon rind (cut into small pieces)
  • 1 large apple (peeled, cored, and diced)
  • 1 cup sugar
  • Juice of one lemon
  • 1 tsp vanilla extract

Instructions

  1. Peel the tough green skin off the watermelon and chop the white rind into small pieces.
  2. In a stainless steel saucepan or Dutch oven, combine chopped rinds, diced apple, sugar, lemon juice, and vanilla extract. Bring to a boil over medium heat until sugar dissolves.
  3. Reduce heat and simmer for 60-120 minutes until the mixture thickens and the rind becomes tender and translucent.
  4. Allow to cool slightly before emulsifying with an immersion blender for smoothness or leave chunky if preferred.
  5. Spoon warm jam into sterilized jars and process in a boiling water bath for 10 minutes.
