  • Leaf green food coloring
  • 1 1/2 cups unsalted butter for frosting
  • 34 cups powdered sugar for frosting
  • 1/2 tsp powdered watermelon Kool-Aid mix for frosting
  • Small amount of red gel food coloring for frosting
  • Mini chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the butter and sugar until fluffy. Add egg whites one at a time, mixing well.
  3. Blend in sour cream, milk, and vanilla. In another bowl, whisk flour, baking powder, and salt; gradually combine with wet ingredients.
  4. Add food coloring to achieve desired shade and fill liners two-thirds full.
  5. Bake for 15-18 minutes or until a toothpick comes out clean. Cool on a wire rack.
  6. For frosting: Beat butter until creamy; gradually add powdered sugar and Kool-Aid mix until smooth. Use red gel food coloring for a pink hue.
  7. Frost cooled cupcakes and top with mini chocolate chips.
