  • 2 tablespoons ghee or unsalted butter
  • 2 leeks (white part only), quartered and sliced thinly
  • 3 carrots, peeled and diced small
  • 3 parsnips, peeled and diced small
  • 3 celery ribs, diced small
  • 2 small red potatoes, peeled and diced small
  • Salt and black pepper to taste
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, pressed
  • 1 (14.5 ounce) can whole tomatoes, drained and diced
  • 6 cups vegetable broth or chicken broth
  • 1 cup peas
  • 1 cup kale, chopped
  • Fresh parsley and lemon juice for garnishing

Instructions

  1. Prepare all ingredients by chopping vegetables as listed.
  2. In a large soup pot over medium-high heat, combine ghee or butter with olive oil.
  3. Add leeks, carrots, parsnips, celery, and potatoes; season with salt and pepper. Cook until slightly translucent (about 34 minutes).
  4. Stir in Italian seasoning, dried parsley, and garlic; cook until fragrant.
  5. Add diced tomatoes followed by broth; bring to a boil then reduce heat to simmer for about 15 minutes until vegetables are tender yet firm.
  6. Finish by stirring in peas, kale, fresh parsley, and a squeeze of lemon juice.
