  • 350 g sweet potatoes
  • 50 g vegan Greek-style yogurt
  • 160 ml soy milk
  • 2 teaspoons apple cider vinegar
  • 118 ml olive oil
  • 100 g granulated sugar
  • 80 g brown sugar
  • 270 g all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon baking soda
  • 1 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • teaspoon sea salt
  • 100 g pecans (optional)
  • 160 g powdered sugar
  • 34 tablespoons soy milk

Instructions

  1. Preheat the oven to 220C (430F) and roast the wrapped sweet potatoes for 4045 minutes until softened. Cool before peeling.
  2. Preheat your oven to 175C (350F). Grease a loaf pan and prepare vegan buttermilk by mixing soy milk and apple cider vinegar; let it sit for 10 minutes.
  3. Puree cooled sweet potatoes in a food processor with vegan yogurt until smooth. In a large bowl, combine the puree with sugars, olive oil, and vanilla extract, then mix in the vegan buttermilk.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold into the wet mixture along with chopped pecans.
  5. Pour batter into the prepared pan and bake for 6070 minutes until golden brown and a toothpick comes out clean.
