  • ¼ cup granulated sugar (for crumb topping)
  • ¼ cup brown sugar (for crumb topping)
  • ¼ cup finely chopped pistachios (for crumb topping)
  • ¼ teaspoon salt (for crumb topping)
  • ¼ cup vegan butter, melted (for crumb topping)
  • ½ cup powdered sugar (for glaze, optional)
  • 12 tablespoons plant-based milk (for glaze, optional)
  • ¼ teaspoon vanilla or almond extract (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine all-purpose flour, ground pistachios, granulated sugar, brown sugar, baking powder, baking soda, and salt. Mix well.
  3. In another bowl, whisk together almond milk, vegetable oil, apple cider vinegar, vanilla extract, and almond extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. In a separate bowl, combine all-purpose flour, granulated sugar, brown sugar, chopped pistachios, and salt for the crumb topping.
  6. Pour in melted vegan butter and mix until crumbly.
  7. Pour the batter into a greased baking pan. Sprinkle the crumb topping evenly over the batter.
  8. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
