  • 4 bone-in, skin-on chicken thighs
  • Salt & black pepper
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 4 medium Yukon Gold potatoes, peeled and cubed
  • 1215 baby carrots
  • Heavy cream
  • 1 tbsp chopped fresh parsley plus more for garnish
  • 1 tsp dried thyme
  • 3 tbsp butter
  • 1/2 cup whole milk warm
  • 1 tsp honey or brown sugar

Instructions

  1. Boil peeled and cubed potatoes in salted water until fork-tender (15-20 minutes). Drain and mash with butter and warm milk; set aside.
  2. In a skillet, melt butter over medium heat; sauté baby carrots with honey until tender (10-12 minutes).
  3. Season chicken thighs with salt and pepper; sear in the same skillet until golden brown on both sides.
  4. Sauté minced garlic, add flour, then gradually whisk in chicken broth, thyme, parsley, and heavy cream to make gravy.
  5. Return chicken to the skillet; simmer until internal temperature reaches 165°F (74°C).
  6. Serve chicken topped with gravy alongside mashed potatoes and glazed carrots.
