  • 4 medium carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • 3 celery ribs, sliced
  • medium onion, diced
  • 1 leek, halved lengthwise, sliced, and rinsed
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • cup roughly chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add carrots, parsnips, celery, leek, and onion; saut for 45 minutes. Stir in garlic, salt, and pepper; cook for an additional minute.
  2. Add thyme, tarragon, bay leaf, chicken breasts, and broth. Bring to a boil then lower the heat to simmer for about 15 minutes until chicken is cooked through.
  3. Remove chicken from the pot and shred using two forks. Return shredded chicken to the pot and simmer for another minute.
  4. Discard herb sprigs and bay leaf. Stir in parsley before serving.
