Ultimate Beef Massaman Curry is a deliciously rich and aromatic dish that captures the essence of Thai cuisine.   • 1 kg braising beef (beef chuck), cut into chunks
  • 400 g canned coconut milk
  • 400 ml beef stock
  • 2 tbsp vegetable oil
  • Massaman paste (homemade or store-bought)
  • Baby new potatoes
  • Fresh lime juice

Instructions

  1. Make the Massaman paste by blending all paste ingredients until smooth.
  2. Toss the beef chunks in cornflour, salt, and pepper.
  3. Sear the beef in a large heavy-based pan until browned. Remove from heat.
  4. Add the Massaman paste to the pan and cook for 2-3 minutes.
  5. Pour in the beef stock and coconut milk; stir well and simmer covered for 1 hour 45 minutes.
  6. Stir in halved baby potatoes and cook for an additional 25-30 minutes until tender.
  7. Finish with fresh lime juice before serving over steamed rice.
