  • 1 yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 large carrots (peeled and chopped)
  • 1 stalk celery (diced)
  • 1/3 cup white wine
  • 2 cups chopped kale
  • 2 to 4 cups vegetable broth
  • Tomato paste, spices, and bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat and saut onions until golden brown.
  2. Add garlic, celery, and carrots; cook for about 10 minutes until softened.
  3. Deglaze the pot with white wine, letting it evaporate for 5 minutes.
  4. Stir in cannellini beans, broth, tomato paste, spices, and bay leaves; bring to a boil.
  5. Reduce heat to low; simmer covered for 15 minutes.
  6. Discard bay leaves; blend part of the soup until smooth then return it to the pot.
  7. Add chopped kale; simmer until wilted. Adjust seasoning to taste before serving.
