  • 4 oz sun-dried tomatoes (chopped)
  • 14 oz artichoke hearts (drained and chopped)
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning (thyme, basil, oregano, rosemary)

  • teaspoon black pepper (coarse)

Instructions

  1. Prepare all ingredients by peeling shrimp and chopping vegetables.
  2. Heat olive oil in a skillet over medium heat. Season shrimp with smoked paprika, Italian seasoning, salt, and pepper. Cook shrimp for 2-3 minutes per side until pink and opaque; remove from skillet.
  3. In the same skillet, saut minced garlic until fragrant. Add sun-dried tomatoes and artichokes; cook for an additional minute.
  4. Pour in heavy cream and stir in spinach until wilted. Return shrimp to the skillet; gently combine with sauce and simmer for another minute.
