  • 10 ounces cherry tomatoes (halved)
  • 1/2 medium red onion (thinly sliced)
  • 1 jar (12 ounces) marinated artichoke hearts (drained)
  • 1 can (15 ounces) chickpeas (rinsed and dried)
  • 2 tablespoons fresh basil (thin strips)
  • 2 tablespoons fresh chives (finely diced)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients: halve cherry tomatoes, slice red onion, chop chives and basil, drain artichokes, and rinse chickpeas.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and garlic powder to make the vinaigrette.
  3. In a large mixing bowl, combine prepared vegetables with the vinaigrette and gently toss until everything is evenly coated.
  4. Chill for at least 1 hour before serving to allow flavors to meld.
