  • 1 tablespoon freshly squeezed lime juice
  • 1 big squeeze of fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1 tablespoon minced cilantro
  • 1 tablespoon minced red onion
  • 1 teaspoon minced jalapeno pepper
  • 1/2 cup rich sour cream
  • 3 tablespoons finely crumbled cotija cheese
  • 2 tablespoons mascarpone or cream cheese
  • 1 tablespoon lime juice
  • 1 tablespoon minced cilantro
  • 1 pinch of salt
  • 1 cup small diced tomatoes
  • 1/2 cup small diced bell peppers
  • 3 tablespoons small diced red onions
  • 1/2 fresh lime, juice only
  • 1 big squeeze fresh lemon juice
  • 2 tablespoons minced cilantro
  • 1 teaspoon minced jalapeno
  • 1/2 teaspoon kosher salt

Instructions

  1. For the guacamole layer, mash avocados in a bowl and mix in lime juice, lemon juice, salt, cilantro, red onion, and jalapeno.
  2. In another bowl, combine sour cream, cotija cheese, mascarpone, lime juice, and cilantro for the creamy layer.
  3. Prepare the confetti salsa by mixing diced tomatoes, bell peppers, red onions, lime juice, lemon juice, cilantro, jalapeno pepper, and salt.
  4. Layer the guacamole at the bottom of a serving dish followed by the creamy cotija mixture and top with confetti salsa.
