  • 1 white onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups arborio rice
  • 8 cups vegetable broth
  • 24 ounces tomato puree
  • 1 teaspoon dried oregano
  • teaspoon salt
  • teaspoon black pepper
  • Fresh basil leaves and parmesan cheese for garnish

Instructions

  1. Warm the vegetable broth in a pot.
  2. In a large skillet, heat olive oil over medium heat. Saut onion for 3 minutes, then add garlic and cook for another minute.
  3. Stir in arborio rice and toast lightly for 1-2 minutes.
  4. Pour in one cup of hot broth and tomato puree; add oregano, salt, and pepper.
  5. Simmer gently for 15-20 minutes, adding broth gradually until absorbed and the rice is al dente.
  6. Turn off heat and incorporate parmesan cheese and basil.
  7. Let sit for 2 minutes before serving topped with charred cherry tomatoes.
