  • 3 large eggs
  • 2 tablespoons oil
  • 1 tablespoon minced garlic
  • 1/2 tablespoon ginger (thinly sliced)
  • 2 large ripe tomatoes (chopped)
  • 5 cups low sodium chicken stock
  • 2 tablespoons light soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon white pepper
  • Salt to taste
  • 2 tablespoons cornstarch
  • 1/2 cup chopped green onion

Instructions

  1. Make a cornstarch slurry by mixing it with two tablespoons of water until smooth.
  2. Heat the oil in a soup pot over medium heat and saut garlic and ginger for about 30 seconds.
  3. Add chopped tomatoes and cook for 34 minutes until soft.
  4. Stir in half the green onions and saut for another 30 seconds.
  5. Pour in the chicken stock, bring to a boil, then reduce heat.
  6. Add soy sauce, salt, white pepper, and sesame oil; mix well.
  7. Slowly add the cornstarch slurry while stirring continuously; simmer for one minute.
  8. Beat the eggs in a bowl and drizzle them into the soup while stirring gently to create ribbons.
  9. Simmer for another minute before serving hot, garnished with remaining green onions.
