  • 8 oz baguette bread (cut into 1-inch slices)
  • 4 oz fresh mozzarella cheese (thinly sliced)
  • 2 oz onions (chopped)
  • 4 tbsp extra virgin olive oil (divided)
  • 2 tbsp minced garlic
  • 4 tbsp balsamic vinegar
  • 2 tsp honey
  • 1/8 tsp salt
  • 0.5 oz fresh basil (chopped)

Instructions

  1. Preheat the oven to 350F.
  2. In a bowl, combine 2 tbsp olive oil and minced garlic; set aside.
  3. Brush each baguette slice with the garlic mixture and place on a baking sheet. Bake for about 10 minutes until lightly browned.
  4. In a small saucepan, reduce balsamic vinegar over medium-low heat for about 8 minutes. Stir in honey and cook for an additional 2 minutes until thickened; set aside.
  5. In another bowl, mix remaining olive oil, chopped tomatoes, onions, salt, and basil.
  6. Assemble by placing mozzarella on each toasted bread slice, topping with tomato mixture, and drizzling balsamic glaze before serving.
