  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/3 cup chopped cilantro
  • 4 cloves garlic
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • 3 bell peppers (red, yellow, orange)
  • 1 medium onion
  • 1 tsp kosher salt (for onions and peppers)
  • 12 flour tortillas
  • 1 cup shredded Monterey Jack cheese (optional)
  • sour cream
  • Chipotle Mayo
  • guacamole
  • lime wedges
  • cilantro (chopped)

Instructions

  1. Marinate sliced chicken thighs in lime juice, soy sauce, spices, and garlic for at least 15 minutes.
