  • 2 bags frozen peaches (20 ounces each)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 stick unsalted cold butter
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • teaspoon salt
  • cup boiling hot water

Instructions

  1. Preheat your oven to 375F.
  2. In a greased 9×13 baking dish, combine frozen peaches, sugars, extracts, spices, corn starch, butter, water, and lemon juice. Mix well and cover with foil. Bake for 20 minutes.
  3. While baking, mix flour, sugars, baking powder, salt, and cinnamon in a bowl. Cut cold butter into the mixture until crumbly. Stir in boiling water until just combined.
  4. Remove the peach filling from the oven and drop spoonfuls of dough over it. Sprinkle with additional sugar and cinnamon. Bake uncovered for another 30-45 minutes until the crust is golden brown.
