Ingredients

  • 2 cups butternut squash (peeled and cubed)
  • 2 cups carrots (peeled and sliced)
  • 2 cups potatoes (chopped)
  • 2 cups celery (chopped)
  • 1 cup green lentils
  • 3/4 cup yellow split peas (or more lentils)
  • 1 onion (chopped)
  • 5 cloves garlic (minced)
  • 810 cups vegetable or chicken broth
  • 2 teaspoons herbs de Provence
  • 23 cups kale (chopped)
  • 1/2 cup olive oil

Instructions

  1. Prepare all ingredients by chopping vegetables and measuring out legumes.
  2. Place all ingredients into the crockpot: squash, carrots, potatoes, celery, lentils, onion, garlic, broth, herbs de Provence, kale, and olive oil. Mix gently.
  3. Cover and cook on high for 5-6 hours or low for 7-8 hours until veggies are tender.
  4. For creaminess, remove about 4 cups of soup and blend until semi-smooth; return to pot and stir well.
  5. Let sit before serving; adjust seasoning with sherry or vinegar as desired.
