  • 1 can (15 oz) black beans, rinsed and drained
  • 8 corn tortillas
  • 2 ripe avocados
  • Juice of 1 lime
  • 1 medium tomato, diced
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place in the baking dish.
  3. Bake for 25-30 minutes until fully cooked (internal temperature of 165°F / 74°C). Shred the chicken using two forks.
  4. In a bowl, mash avocados with lime juice; mix in garlic, diced tomato, cilantro, salt, and pepper.
