  • 1 Thai red chili (finely sliced)
  • 1/4 cup shredded Thai basil
  • 1/3 cup chopped toasted cashews
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp lime zest
  • 2 tsp lime juice
  • 1/2 tbsp fish sauce (omit if vegan)
  • 1 tbsp coconut aminos (or tamari/soy sauce)
  • 1 tbsp orange juice

Instructions

  1. In a small bowl, whisk together sesame oil, grated ginger, lime zest, lime juice, fish sauce (if using), coconut aminos, and orange juice until well combined.
  2. In a large bowl or serving platter, layer cubed watermelon and cucumber as the base.
  3. Top with shallots, cashews, chili, mint leaves, and Thai basil.
  4. Pour the dressing over the salad and gently toss everything together. Serve immediately.
