  • 2 cups vegetable broth
  • 1 can (15 oz) coconut milk

Instructions

  1. Heat coconut oil in a medium saucepan over medium heat until melted.

  4. Stir in diced tomatoes, cilantro, and vegetable broth; mix well.
  5. Incorporate coconut milk into the pot (reserve 1/4 cup for garnish) and stir thoroughly.
  6. Bring to a boil, then lower the heat to simmer for about 5 minutes.
  7. Blend the soup until smooth using an immersion blender or standard blender.
