  • 1 tbsp peanut or coconut oil
  • 1 1/2 lb boneless, skinless chicken breast (cut into quarters)
  • 1 tsp salt
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1 can California cling peach slices
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • juice of one lime
  • 1 tbsp Thai chili sauce
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper (cored and thinly sliced)
  • 1/4 cup chopped peanuts
  • 2 tbsp fresh cilantro (chopped or use parsley or basil)

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Season chicken with salt; add to the skillet and brown on both sides for about 3 minutes each.
  3. Remove chicken and reduce heat to medium-low. Saut onion, garlic, and ginger until softened (about 3 minutes).
  4. Drain peaches but reserve juice. In a bowl or jar, whisk together reserved peach juice, honey, vinegar, sauces, lime juice, lemongrass, and cornstarch until smooth.
  5. Return chicken to the skillet along with the prepared sauce and peach slices; cook until sauce thickens (about 5 minutes).
  6. Garnish with chopped peanuts and cilantro before serving.
