  • 1.5 lbs boneless skinless chicken breast, cooked and shredded
  • 1 tablespoon coconut oil
  • 1 cup red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons red curry paste
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 1/2 cup green beans or snow peas
  • 1 red pepper, julienned
  • 8 oz brown rice noodles
  • 14 oz coconut milk (in a can)
  • 2 tablespoons fresh lime juice
  • 1/3 cup fresh cilantro, diced

Instructions

  1. Heat coconut oil in a large soup pot over medium-high heat.
  2. Saut red onions until translucent (about 3-4 minutes). Add garlic and ginger; saut for another 30 seconds.
  3. Stir in red curry paste for about 2-3 minutes until thickened.
  4. Pour in chicken broth and bring to a boil; reduce to simmer and add shredded chicken.
  5. In a separate pot, cook brown rice noodles according to package directions (approximately 4 minutes), drain, and cool.
  6. Add noodles and sliced vegetables into the soup pot.
  7. Blend about a cup of broth with coconut milk until smooth; return to the pot and stir well.
  8. Simmer for an additional 5 minutes before serving with lime juice and cilantro.
